Hitex …Texture and stable solution for food industry.

Hitex for mozzarella, shredded and feta cheese are cost effective solutions to the specific challenges of dairy applications.

Hitex 505
The selected ingredient that reacts synergistically to stabilize both oil and water phase ingredients and disperses evenly on cheese shred surfaces .In addition to that,it reduces clumping, becomes more effective for free oil, and increases the appearance of separate cheese shreds. By treating with Hitex, functional properties of shredded cheese have been positively altered in a way which increased acceptability by consumers.

Hitex 555
protects the milk protein, building a matrix between the milk protein and other ingredients, contributing gelling network. Hitex 555 supports the texture, appearance, yield and gives a soft-firm texture. Hitex 555 is designed to ensure and enrich the product stability to prevent syneresis and deformation.
Ingredients are carefully selected to stand heat treatment, sharing process as in soft cheese production. The synergistic effects obtained from this Hitex gum combination, which includes a smooth texture with Fat-like body and mouth feel, as well as a non-thermo reversible gel,. Stabilizer disperses easily in warm water producing a very viscous solution, useful in applications where a thickening agent is necessary.
